Single Bevel vs Double Bevel Japanese Knives

A double-bevel knife is sharpened from both sides; a true single-bevel Japanese knife uses a primary bevel on one side with a different geometry on the reverse. The difference affects cutting behaviour, sharpening and handedness.

Double bevel

Most modern Santoku, Gyuto, Petty and Nakiri knives are double bevel. Many are close to symmetrical and can be used by either hand, though some makers use asymmetric grinds.

Single bevel

Traditional Yanagiba, Deba and Usuba commonly use single-bevel geometry. The large front bevel and slightly concave or otherwise specialised back geometry are designed to work together.

Why handedness matters

A true right-handed single-bevel knife is not simply the same knife turned around for a left-handed user. Left-handed versions need the opposite geometry and should be purchased accordingly.

Cutting behaviour

Single-bevel knives can steer if technique and handedness do not match the grind. Double-bevel knives are generally more familiar to users coming from European chef’s knives.

Sharpening

Double-bevel sharpening works both sides of the edge. Traditional single-bevel sharpening treats the front bevel and back differently and should preserve the original geometry.

Which should you buy?

For a first general-purpose Japanese knife, double bevel is usually simpler. Single bevel makes sense when you specifically want the traditional geometry for fish or vegetable work and are prepared to learn its technique.
