1000 vs 3000 Grit Whetstone: Which Do You Need?

Use 1000 grit to establish or restore a working edge; use 3000 grit after the edge is already sharp when you want additional refinement. They are complementary rather than competing stones.

When to use 1000
For routine sharpening of a dull but undamaged knife. It removes steel quickly enough to reach the apex and leaves a useful kitchen finish.
When to use 3000
After 1000, to reduce scratches and refine the edge. It can produce a smoother cutting feel while still retaining useful bite.
Can you start at 3000?
If the knife is already sharp and needs only light refinement, yes. If it is genuinely dull, 3000 may be unnecessarily slow.
Do you need both?
No. Many home cooks can maintain knives with a single medium stone. Add 3000 when you know why you want the refinement.
