Do Plastic Cutting Boards Release Microplastics?

Yes. Plastic cutting boards can release microplastic particles during chopping. A 2023 study measured particles released from both polyethylene and polypropylene boards as knives repeatedly contacted the surface.

Kitchen knife on a wooden cutting board

Why are particles released?

Knife contact abrades the board. Small fragments can detach from the cutting surface as the board accumulates wear.

Do all plastic boards release the same amount?

No. Material, chopping style, board condition and how the knife contacts the surface all affect abrasion.

Does this prove a health risk?

No. Particle release and health risk are separate questions. Current food-safety assessments still describe major knowledge gaps around dietary exposure and long-term health effects.

Should you throw away a plastic board immediately?

Not because of one study. If you already use plastic, keep it clean and replace it when heavily scored or difficult to clean.

What is the precautionary choice?

If a suitable wooden board works for your kitchen, choosing wood reduces one avoidable source of plastic abrasion in food preparation.
