Yes. A 1000-grit whetstone can be enough for routine home sharpening if the knife is not badly damaged. A properly formed and deburred 1000-grit edge is very effective for everyday kitchen cutting.

What can 1000 grit do?
It can restore an ordinarily dull plain edge, form an apex and leave a practical working finish. For many home cooks, this is the most useful single-stone range.
When is 1000 not enough?
Large chips, broken tips or major reprofiling may need a coarser stone. If you want a smoother polished finish after the edge is already sharp, you may add 3000, 6000 or another fine stone.
Do you need a finishing stone?
No. High grit is a refinement choice, not a requirement for a sharp kitchen knife.
Do all 1000 stones behave the same?
No. Abrasive type, binder and grit standard affect cutting feel and speed.
