The right cutting-board size is the smallest board that still gives your knife and food comfortable working room. There is no single correct dimension for every kitchen.
Start with knife length
A longer chef-style knife needs enough depth and width for a full rocking, push-cutting or slicing motion without constantly running off the board.
Then consider the food
A board for herbs and small vegetables can be smaller than one used for cabbage, squash, whole fish or large cuts of meat.
How do you know a board is too small?
The tip or heel frequently leaves the board, ingredients pile against the edges, or you feel forced to shorten your natural cutting stroke.
Can a board be too large?
Yes. If it is difficult to wash, move or store, the extra size may become inconvenient enough that you avoid using it.
What about counter space?
The board should sit fully supported and stable rather than hanging over an edge or balancing awkwardly.

Choose enough surface area for the longest knife and largest ingredients you use regularly, with some clear space around them.
