Full Carbon vs Stainless-Clad Carbon: What Is the Difference?

The main difference is how much reactive carbon steel is exposed. A full-carbon blade is reactive across most or all of the blade, while a stainless-clad carbon knife protects much of the surface with corrosion-resistant outer layers.

Corrosion

Full-carbon blades can patina or rust across the faces. Stainless-clad versions usually react mainly where the carbon core is exposed near the edge.

Daily care

Both should be washed and dried promptly. Stainless cladding gives you more margin for error on the blade faces.

Patina

A full-carbon knife can develop broad patina across the blade. On a stainless-clad knife, the patina may be limited mostly to the exposed core.

Sharpening

The edge steel can be the same in both constructions, so normal sharpening behaviour may be very similar. Thinning feels different because the cladding steel is softer or more corrosion resistant depending on the construction.

Does cladding improve edge retention?

Not by itself. Edge retention comes mainly from the core steel, heat treatment, hardness, geometry and use.

Which needs less maintenance?

Stainless-clad carbon is usually easier to live with. Full carbon offers a more visibly reactive surface and asks for more consistent drying.
