What Is a Deba Knife Used For?

A Deba is used to break down whole fish. Its core jobs are removing the head, opening the fish, taking fillets off the frame and working through appropriate fish bones with controlled technique.
Whole-fish breakdown
The thick spine and substantial heel give stability around the head, collar and backbone.
Filleting
Deba follows the structure of the fish with rigid, controlled cuts. This is a different method from using a thin flexible fillet knife.
Fish bones
A Deba can handle smaller fish bones and joints when used correctly. It is not designed for large animal bones or repeated cleaver-style chopping.
What should you avoid?
Frozen food, prying, twisting, large dense bones and uncontrolled impact.
Do you need one?
If you regularly prepare whole fish, a Deba has a clear specialist role. If you buy prepared fillets, a Gyuto, Santoku or slicing knife may be enough.
