What Is a Paring Knife?

A paring knife is a short precision knife designed for close work on small ingredients. It is commonly used for peeling, coring, trimming and tasks where a full-size kitchen knife feels too large.

Typical size

Paring knives are usually very short, often around 75–100 mm. That compact size makes the tip easy to control.

Common uses

Peeling fruit and vegetables, hulling strawberries, removing blemishes, coring small fruit, trimming mushrooms and making small decorative cuts are classic paring tasks.

In-hand work

A paring knife is one of the few kitchen knives commonly used while the ingredient is held in the hand. Keep the cutting motion controlled and always direct the edge away from fingers.

How is it different from a petty?

A petty can be the same size, but the petty category also extends into longer 120–150 mm utility blades that are more comfortable on a cutting board.

What should it not do?

Do not force a paring knife through large, dense vegetables or heavy bones. If you need substantial pressure, a larger knife is usually safer and more efficient.

Do you need one?

If you often peel, trim or prepare small ingredients, a paring knife is useful. If you mostly work on a board, a small petty may cover the same role.
