1000 vs 6000 Grit Whetstone: What’s the Difference?

A 1000-grit stone is for ordinary sharpening; a 6000-grit stone is mainly for fine refinement and polishing. A 6000 stone does not efficiently replace 1000 on a dull knife.

1000 grit
Useful for reaching the apex and restoring a normal working edge. It removes enough steel for routine sharpening.
6000 grit
Used after the edge is already formed to refine scratches and produce a finer finish. It removes metal much more slowly.
Do you need 6000?
Not for every kitchen knife. Some users like the refined feel; others prefer the toothier character of a medium or 3000-grit finish.
Can you use only 6000?
Only if the edge is already in very good condition. On a dull blade it can take far too long to do the work of a medium stone.
