Do Japanese Knives Need Special Sharpening?

Japanese knives do not need a special “Japanese-only” sharpening system, but they do need sharpening that respects their actual geometry.

Double-bevel knives
Many general kitchen knives can be sharpened on ordinary water stones by following the existing bevel on both sides.
Thin hard edges need control
Hardness alone does not change the basic sharpening principle, but thin edges reward light pressure and consistent technique.
Single-bevel knives are different
Traditional single-bevel geometry has a wide front bevel and a specialised back side. It should not be treated like a symmetrical V edge.
Serrated knives need another method
Serrations are sharpened according to their individual shape rather than by laying the whole edge on a flat stone.
Do you need a special stone?
No single stone is mandatory. The abrasive simply needs to suit the steel, edge condition and amount of metal that must be removed.
What matters most?
Match the method to the bevel, use a flat stone, work consistently and deburr properly.
