Do You Need to Strop a Japanese Knife?
Sep 27, 2026
No. You do not need to strop a Japanese knife after every sharpening. A clean, stable edge can be produced entirely on whetstones.

What does stropping do?
Stropping can help remove a remaining burr and refine the very apex of the edge.
Can stones do the same job?
Yes. Good finishing strokes on a suitable stone can fully deburr an edge without a strop.
When is a strop useful?
It can be useful if you struggle with burr removal or prefer a slightly smoother, more refined edge feel.
What about compound?
Abrasive compound increases the polishing effect. That can refine the edge further but may also reduce some of the bite of a coarser finish.
Should you strop between sharpening sessions?
You can, but only if the edge is still fundamentally sound. Stropping will not rebuild a genuinely dull or damaged edge.
Is more stropping always better?
No. Excess pressure, too high an angle or too many passes on a flexible surface can change the apex.
