How Do You Care for a Wooden Knife Handle?

Wooden knife handles need simple care: brief hand washing, immediate drying and no prolonged soaking or dishwasher heat.

How should you wash the handle?

Use lukewarm water, mild dish soap and a soft cloth or sponge. Clean it promptly rather than leaving the handle submerged.

How should you dry it?

Wipe it thoroughly after washing and let any residual moisture evaporate naturally away from direct heat.

When should you oil it?

Only if the wood and finish need it. Unsealed wood that looks dry, pale or rough may benefit from a thin coat of a stable food-safe conditioner.

What oil should you avoid?

Avoid cooking oils that can oxidise, become sticky or turn rancid during storage.

Can you over-oil a handle?

Yes. Excess product can leave the surface sticky and attract dirt. Apply a small amount and wipe off the excess.

What about sealed or stabilised wood?

It may need much less conditioning. Follow the actual handle finish rather than applying oil automatically.

What should you inspect?

Watch for opening joints, roughness, movement, swelling or cracks and address them before they worsen.

How Can You Tell Whether a Japanese Knife Is Authentic?

Start with traceable facts: where the finished knife was made, who made or commissioned it, the exact model, steel and construction, and whether independent sources agree. A Japanese name, kanji, Damascus pattern or Japanese steel does not by itself prove Japanese manufacture.

Knife Heat Treatment Explained for Home Cooks

Heat treatment is the controlled heating and cooling that gives knife steel its working balance of hardness, toughness and edge stability. Steel grade matters, but the heat treatment determines how that steel actually behaves in the finished blade.
