How Thin Should a Japanese Chef Knife Be?

There is no single correct thickness for a Japanese chef knife. One spine measurement cannot tell you how a knife will cut.

Why spine thickness is not enough

A blade can have a substantial spine and still become very thin behind the edge through taper and grind. Another blade can look thin at the spine but still wedge if too much steel remains low on the face.

What matters most near the edge?

Thickness a few millimetres above the cutting edge has a strong effect on how easily the knife enters dense food.

What does distal taper do?

A blade that gradually thins from heel toward tip can combine stiffness near the handle with a finer, more precise tip.

Is thinner always better?

No. Very thin geometry can cut with less resistance but may have less support behind the edge and can be less forgiving of twisting or hard impact.

What about food release?

Some thicker or more convex grinds release food better even if they do not glide as effortlessly through dense produce.

How should you choose?

Match the grind to the work you do. Fine vegetable work favours thin geometry; heavier general prep may benefit from more support.
