Why beginners like gyuto
A gyuto feels familiar to anyone who has used a chef’s knife, but many examples have a thinner edge and flatter profile that make push cutting efficient.
Which length is easiest?
A 180 mm gyuto feels compact and controlled. A 210 mm gyuto adds useful reach and is still manageable on most home cutting boards.
Choose moderate geometry
A first gyuto does not need to be extremely thin or extremely hard. Moderate geometry gives some margin for learning while still offering precise cutting.
Stainless or carbon?
Stainless steel reduces the risk of corrosion and simplifies daily care. Carbon steel can be rewarding but requires immediate drying and more attention around moisture and acidic foods.
What habits matter most?
