What Is a Yanagiba Knife Used For?

A Yanagiba is used for precise slicing of boneless fish, especially sashimi and sushi toppings. Its long blade is designed to complete the cut in one smooth drawing stroke.

Why one long draw?

A long continuous cut reduces repeated sawing through delicate flesh and helps leave a cleaner surface.

Is it for whole-fish breakdown?

No. Heads, frames and fish bones are better handled with a Deba or another appropriate knife.

Can it slice meat?

Yes, if the meat is boneless, but a double-bevel Sujihiki is usually easier for general meat slicing.

Can it chop vegetables?

It can cut soft vegetables, but the long narrow single-bevel blade is not designed for routine board chopping.

What should you avoid?

Bones, frozen food, twisting, prying and heavy downward chopping.
