Santoku 180, with a horizontally polished blade
A Japanese-style handle knife, made by Mutsumi Hinoura. Easy to use, easy to sharpen, a pleasure to look at, and to cook with.
The blade is made of shirogami 2 high carbon steel, with stainless steel cladding. The knife is brushed finely to a satin, horizontal finish.
It can be used by both left and right-handed people.
Do not use it on bones or frozen meat.
