Can a Santoku Cut Meat?

Yes. A santoku can cut boneless meat very well. It is suitable for portioning chicken breast, slicing pork or beef, trimming ordinary fat and preparing cooked meat.
Why it works
The santoku has enough blade height and edge length for most home meat preparation, while its relatively flat profile gives good control on a cutting board.
What kind of meat?
Boneless chicken, pork, beef, lamb and cooked meats are all normal santoku tasks. Small amounts of trimming are also fine.
What about joints?
A santoku can work around joints, but it should not be forced through substantial bone. Use a purpose-built boning or heavier knife when the task requires contact with bone.
Can it slice roasts?
Yes, but a longer slicer or gyuto can make cleaner long strokes on large roasts because it requires fewer passes.
What should you avoid?
Do not chop through heavy bones, frozen meat or hard cartilage with a fine santoku edge. Avoid twisting the blade when it is buried in dense food.
Santoku or gyuto for meat?
Santoku is compact and capable. Gyuto usually gives more reach and a more pointed tip for trimming.
