Can You Cut Bones With a Santoku Knife?

No. A santoku should not be used to chop through substantial bones. Most santoku knives are designed for vegetables, fruit, boneless meat and fish, not heavy impact work.
Why bones are risky
Japanese santoku knives often combine relatively hard steel with thin edge geometry. That gives low cutting resistance, but it also gives less margin for sudden impact and sideways force.
What can happen?
The edge can chip, especially if the blade hits hard bone at an angle or is twisted after contact.
What about small fish bones?
Accidental contact with very fine fish bones is different from deliberately chopping through a backbone. If bone cutting is part of the job, use a knife designed for it.
What about chicken joints?
You can cut through the soft gap between joints if you know exactly where it is, but do not force the santoku through bone when the joint does not separate easily.
Frozen food?
Avoid it for the same reason. Frozen food can be much harder than the edge is designed to tolerate.
What is safe?
Vegetables, herbs, fruit, boneless meat and fish are the normal santoku workload.
