Yes. A whetstone is one of the best tools for sharpening a VG10 kitchen knife. VG10 responds well to normal water-stone sharpening when the stone is flat and the existing bevel is followed.

Which grit for routine sharpening?
A medium stone around 1000 grit is a useful default for a normally dull edge.
When should you go coarser?
Use a coarser stone when the edge is chipped, heavily worn or needs substantial reshaping. There is no reason to remove that much steel during ordinary maintenance.
Do you need a fine finishing stone?
No, but it can refine the edge after the medium stone. The ideal finish depends on how you use the knife rather than on VG10 alone.
Should the stone be soaked?
Follow the stone maker’s instructions. Some water stones need soaking; others are splash-and-go.
How do you deburr VG10?
Reduce pressure progressively and alternate sides with very light strokes. A hard stainless edge can hold onto a fine burr if the finish is rushed.
