How Do You Sharpen a Petty or Paring Knife?

Sharpen a Petty or paring knife by following the existing bevel on a flat stone and using controlled, light pressure. Small blades need the same edge fundamentals as larger knives, but hand placement matters more.

1. Choose a stable stone
A medium water stone around 1000 grit is suitable for normal maintenance. Use coarser grit only for real damage.
2. Follow the existing bevel
Do not force the knife to a universal angle. Match the edge that is already there unless you are intentionally changing it.
3. Support the blade carefully
Because the blade is short, keep fingertips clear of the edge and maintain consistent contact from heel to tip.
4. Use lighter pressure
Small knives need less force. Excessive pressure can make angle control harder and create a larger burr than necessary.
5. Sharpen both sides
Work evenly unless the knife is intentionally asymmetric.
6. Deburr completely
Alternate sides with very light strokes until the burr is gone.
7. Test safely
Paper or normal food prep can confirm that the edge is continuous and clean.
