How Often Should You Sharpen a Japanese Knife?

There is no universal schedule for sharpening a Japanese kitchen knife. Sharpen when performance declines, not because a fixed number of weeks has passed. A home knife may go months between full sharpenings, while a professional knife used all day may need attention much sooner.

Signs the knife needs sharpening

  • It slips on tomato or pepper skin.
  • It tears herbs instead of cutting cleanly.
  • You need noticeably more pressure.
  • Sections of the edge feel flat or damaged.
  • Your normal light edge maintenance no longer restores performance.

What changes the interval?

Steel and heat treatment, edge geometry, cutting board, technique, foods and daily use all affect wear. A glass or stone board can dull an edge much faster than a suitable wooden board.

Should you sharpen before the knife becomes completely dull?

Usually yes. Light maintenance is faster and removes less steel than waiting until the edge is severely worn.

Does carbon steel need sharpening more often?

Not simply because it is carbon steel. Edge retention depends on the actual steel, hardness, geometry and use. Carbon steel does need more corrosion care.

Pay attention to cutting performance. If the knife no longer cuts cleanly with normal technique, inspect the edge and sharpen appropriately.
