How Do You Use a Japanese Mandoline Safely?

Use a mandoline on a stable surface, keep your fingers away from the blade, and use the food holder or protective pusher whenever your model provides one. Mandoline blades are extremely sharp, so safety matters more than speed.
1. Stabilize the mandoline
Set the mandoline securely on a stable work surface or over a suitable container if the model is designed for that use. Do not slice while the tool is sliding or rocking.
2. Read the model-specific instructions
Mandolines vary widely. Some include holders, pushers, thickness controls or interchangeable blades; others are simpler fixed-blade tools. Follow the instructions for the model in front of you.
The current SUWADA Japanese Mandoline product description does not specify an included hand guard or pusher. We therefore do not claim that one is supplied.
3. Keep fingers away from the blade
Never touch or adjust a sharp cutting edge directly. Manufacturers such as de Buyer explicitly warn that mandoline blades are extremely sharp and require careful handling.
4. Use the holder or pusher when your model provides one
On mandolines supplied with a protective holder, use it as directed. Do not improvise around a very sharp blade.
5. Stop before the ingredient becomes unsafe to hold
Do not keep pushing a small remaining piece toward the blade with exposed fingertips. Stop while you still have safe control, or use the model’s protective holder if one is provided.
6. Clean carefully
Keep hands away from the cutting edge during washing. The current SUWADA/Prince mandoline should be rinsed with warm water after use and kept out of the dishwasher.
