A 3000-grit whetstone is mainly used to refine an edge that has already been sharpened.

Refining scratches
After a medium stone, 3000 grit can reduce deeper scratch patterns and leave a smoother edge finish.
Improving cutting feel
It can make draw cuts and fine slicing feel smoother when the knife and food benefit from extra refinement.
Can 3000 grit sharpen a dull knife?
It can remove steel, but it is usually inefficient for a genuinely dull edge because it cuts more slowly than a medium stone.
Do you need it after 1000 grit?
No. A clean 1000-grit edge is already highly useful. Add 3000 grit only when you want the change in finish.
Is 3000 grit a polishing stone?
It sits in a refining range rather than extreme polishing. Higher grits can take the finish further.
What knives benefit most?
That depends on steel, geometry and intended use. Do not choose grit by steel name alone.
