Boneless fillets
A sharp santoku can portion salmon, white fish and other fillets cleanly. Its broad blade gives good control on the board.
Skin and trimming
Small trimming jobs are possible, although a narrower petty or specialist fish knife can offer more precision in tight areas.
Whole fish
A santoku is not designed for repeatedly working through fish heads, backbones or heavy bones. Traditional whole-fish breakdown can benefit from a more substantial purpose-built knife.

A santoku can cut slices of boneless fish, but long sashimi cuts are easier with a long slicer because the cut can be completed in one smooth draw.
