Yes. You can use a plastic cutting board with a Japanese knife. It is not automatically harmful to the knife, but board hardness, wear and surface condition matter.
Will plastic damage the edge?
A normal cutting board is far better than glass, stone or ceramic. However, a firmer surface can still wear a fine edge faster than a more yielding wooden board.
What if the board has deep grooves?
Replace it when grooves become difficult to clean or the surface is badly worn. Deep scoring can also make cutting feel uneven.
What about microplastics?
Chopping can abrade plastic boards and release small particles. The existence of particle release is documented; the long-term health significance remains uncertain.
When is plastic useful?
It can be practical in colour-coded hygiene systems or when a nonporous board is preferred for a specific workflow.
What should you avoid?
Avoid brittle, very hard plastic boards and any board that slides on the counter.
What is the better everyday default?
For fine Japanese edges, a stable wooden board is usually the more forgiving choice.
