Should You Soak a Whetstone?

Do not automatically soak every whetstone. Some water stones are designed to absorb water before use; others are splash-and-go and only need their surface wetted.

Why do some stones need soaking?

Porous soaking stones work better once their internal structure has absorbed enough water to keep the sharpening surface lubricated and prevent it drying immediately.

Why should some stones not be soaked?

Denser or resin-bonded stones can be designed for surface wetting only. Long soaking may not help and, depending on construction, can damage or weaken some stones.

How long should a soaking stone stay in water?

Follow the manufacturer. Naniwa, for example, lists some of its stones as surface-wet only and others at roughly 5–20 minutes. The correct time is stone-specific.

What is splash-and-go?

A splash-and-go stone is used after wetting the surface rather than fully soaking the stone. Add water during sharpening as the surface dries.

What if you do not know which stone you have?

Find the product instructions before submerging it. If the stone is unidentified, avoid an hours-long soak until you know its binder and manufacturer guidance.

After sharpening

Rinse away swarf, wipe the stone and allow it to dry gently away from strong heat and direct sunlight. Do not put a whetstone in the dishwasher.

Hand-Forged vs Machine-Made Japanese Knives: What Is the Difference?

Hand-forged and machine-made are not clean opposites. A forged knife may use power hammers, presses and grinders, while a factory-made knife may receive substantial hand grinding and sharpening. The practical difference is the production route, not an automatic quality ranking.

How Are Japanese Kitchen Knives Made?

Japanese kitchen knives are made through several production routes. A blade may be forged from hot steel or cut from rolled stock, then heat-treated, ground, straightened, finished, sharpened and fitted with a handle. Not every Japanese knife is hand-forged.
