What Is a Gyuto Knife Used For?

A gyuto is used as a general-purpose Japanese chef’s knife. It handles vegetables, herbs, boneless meat, fish and most everyday board preparation while providing more reach and a more pronounced point than a santoku.
Vegetables
The edge works well for onions, cabbage, herbs, root vegetables and mixed prep. Many gyuto have a flatter profile than strongly curved Western chef’s knives, so push cutting feels natural.
Boneless meat
A gyuto is excellent for trimming, portioning and slicing boneless meat. The pointed tip is useful around fat, connective tissue and small details.
Fish
It can portion fillets and handle general fish preparation. Whole-fish butchery and specialist sashimi work can justify purpose-built shapes.
Longer slicing strokes
Common gyuto lengths provide more edge than a compact santoku. That is useful for larger ingredients, roasts and clean draw cuts.
What is a gyuto not for?
Do not use a fine gyuto edge as a cleaver for substantial bones, frozen food, hard pits or shells. Avoid twisting through dense food.
Why choose one as an everyday knife?
Its combination of edge length, point control and general-purpose geometry lets one knife cover a large percentage of normal kitchen work.
