What Grit Do You Need for a Very Dull Knife?

For a very dull knife, choose a grit coarse enough to rebuild the edge efficiently but no coarser than necessary.
Normal dullness
A medium stone around 800–1200 grit is often enough when the edge is simply tired but not badly damaged.
Very dull or rounded edge
If reaching the apex on a medium stone would take excessive time, a coarse stone around the low hundreds can speed up the work.
Chips or reprofiling
Meaningful chips and major angle changes also justify coarse grit because more steel has to be removed.
Why not always start coarse?
Coarse stones remove material quickly and leave deeper scratches. Unnecessary use shortens blade life.
What comes after the coarse stone?
Move to a medium stone to refine the scratch pattern, finish forming the edge and deburr cleanly.
How do you know you chose correctly?
The stone should make steady progress without forcing you to grind for an excessive time or remove more steel than the condition requires.
