An Azumagata vegetable knife is mainly used for chopping, slicing and preparing vegetables on a cutting board. The exact technique depends on the knife’s bevel construction.
Everyday vegetable prep
The tall blade and broad front work well for onions, cabbage, carrots, leafy greens, herbs and other board-based preparation.
Push cutting
The profile generally suits controlled downward or forward cutting rather than large rocking motions. Let the edge contact the board cleanly instead of forcing the knife into a curved chef-knife technique.
Single-bevel versions
Traditional Azumagata usuba knives are single bevel. They can support precise vegetable techniques, but they require more specialised sharpening and can steer differently from a double-bevel knife.
Double-bevel versions
When the Azumagata name is used on a double-bevel vegetable knife, the technique is closer to a nakiri: straightforward push cutting, chopping and slicing with an ambidextrous edge.
