Do You Need Multiple Whetstones or Just One?

You do not need a large whetstone collection to maintain kitchen knives well. For many home cooks, one medium stone is the most useful starting point.

One medium stone can do most routine work
A stone around 800–1200 grit can sharpen a normally dull plain-edge knife and leave a practical working finish.
When do you need a coarse stone?
Add one when you regularly repair chips, reprofile edges or work on knives that are extremely blunt.
When do you need a fine stone?
Add one when the edge is already established and you want a smoother, more refined finish.
Do combination stones make sense?
They can be convenient when both sides match the work you actually do, but they are not automatically better than one standalone stone.
Why not buy every grit?
More stones add cost, storage and extra steps. Technique on one appropriate stone matters more than owning a long progression.
A simple setup
Start with one medium stone and a reliable flattening method. Expand only when a specific task justifies it.
