How Do You Flatten a Whetstone?

A whetstone should be flattened when wear creates a hollow or dish in the working surface. A dished stone can change edge geometry and makes controlled sharpening more difficult.

How do you know the stone is dished?

Place a straightedge across the stone or draw a light pencil grid over the surface. During flattening, low areas remain marked while high areas are removed first.

What can you flatten with?

Use a purpose-made diamond flattening plate, a compatible dressing stone or waterproof abrasive paper on a verified flat surface. Naniwa specifically recommends a dressing stone or waterproof sandpaper for correcting concavity.

Basic method

  1. Wet the whetstone and flattening tool as appropriate.
  2. Draw a pencil grid across the stone.
  3. Rub the stone and flattening surface together evenly, using the full area.
  4. Rotate the stone periodically so pressure stays even.
  5. Continue until the pencil grid disappears uniformly.
  6. Rinse away abrasive slurry and let the stone dry correctly.

How often should you flatten?

Not on a fixed calendar. Soft coarse stones can dish quickly; hard stones may stay flat much longer. Check during use rather than waiting for a deep hollow.

Do the corners matter?

Sharp stone corners can chip. A very small chamfer on the outer edges can reduce damage without changing the working surface.

How Can You Tell Whether a Japanese Knife Is Authentic?

Start with traceable facts: where the finished knife was made, who made or commissioned it, the exact model, steel and construction, and whether independent sources agree. A Japanese name, kanji, Damascus pattern or Japanese steel does not by itself prove Japanese manufacture.

Knife Heat Treatment Explained for Home Cooks

Heat treatment is the controlled heating and cooling that gives knife steel its working balance of hardness, toughness and edge stability. Steel grade matters, but the heat treatment determines how that steel actually behaves in the finished blade.
