Is a Deba Knife Single Bevel?

Traditional deba knives are usually single bevel. They have a large primary bevel on one side and a hollow-ground back on the other.

What does single bevel change?

The geometry influences how the knife moves through food and can create steering if the user is not accustomed to it.

Is a deba handed?

Yes. Traditional single-bevel deba knives are made for right- or left-handed use. A right-handed version should not simply be converted by changing the edge.

Are all deba knives single bevel?

No. Some modern or Western-style deba-inspired knives are double bevel. The product specification matters more than the name alone.

Why use single bevel?

It allows precise control in traditional fish preparation and creates a different cutting action from a symmetrical double-bevel edge.

Does sharpening differ?

Yes. You must preserve the main bevel, shinogi line and hollow back. Treating a true single-bevel knife like a standard V-edge can damage its geometry.
