What Is a Petty Knife?

A petty knife is a small Japanese utility knife used for precise preparation. It sits between a very short paring knife and a full-size santoku or gyuto.

The category covers a wide range of small blades. Short examples behave like paring knives, while 120–150 mm petty knives are comfortable on a cutting board and act more like compact utility knives.

What is it used for?

Petty knives are useful for garlic, shallots, citrus, herbs, small fruit, mushrooms, trimming meat and removing small amounts of fat or connective tissue.

Why not use a chef’s knife?

You can, but a smaller blade gives better access and control when the ingredient is small or the work is detailed.

Can you use it in your hand?

Very short petty knives can work well for peeling and close in-hand work. Longer versions are more comfortable on a board.
