What Is Fukamushi Sencha? Deep-Steamed Japanese Green Tea Explained

Fukamushi Sencha is a deep-steamed style of Japanese green tea. It is made with the same broad Sencha process—steaming, rolling and drying—but the steaming stage is substantially longer. Under the current Japanese green-tea labeling framework, Fukamushi Sencha is Sencha-type tea steamed for roughly twice as long as ordinary Sencha.
That extra steaming changes more than the name. It weakens the leaf structure, creates more small and broken particles, speeds extraction, and often produces a denser, cloudier green cup. Those traits also change how you should think about steep time and filtration.

What does “Fukamushi” mean?
Fukamushi means “deep-steamed.” Fresh tea leaves are steamed soon after harvest to stop enzymatic oxidation. In Fukamushi production, that steaming stage is extended compared with ordinary Sencha.
The longer steaming softens the leaves more thoroughly. During later rolling and drying, the leaf material therefore tends to break into a greater proportion of smaller pieces and fine particles.
This is why dry Fukamushi can look less uniformly needle-like than some standard Sencha. The appearance is a consequence of processing, not evidence that the tea is automatically lower quality.

These are tendencies, not quality rankings. Cultivar, growing conditions, harvest, finishing, leaf grade, water and brewing method all still matter.
Why does Fukamushi brew faster?
Smaller and more damaged leaf pieces expose more surface area to water than large intact leaves. That generally lets soluble material move into the water faster.
For practical brewing, this means you usually do not need to copy the same steep time you use for a more intact Sencha. A shorter first infusion is a sensible starting point for Fukamushi.
A useful reference is about 2 g of tea per 60 mL of water, around 70–80°C, for roughly 30 seconds. Treat that as a starting framework rather than a law: follow the producer’s instructions when available, then adjust to the tea and your preference.
Why is Fukamushi Sencha cloudy?
Cloudiness in Fukamushi is often caused by very small tea particles suspended in the liquor. Longer steaming weakens the leaves, and later processing creates more fine material. Some of that material can pass through the teapot or strainer and remain in the cup.
A cloudy cup is not automatically a bad cup. With deep-steamed tea, turbidity and fine sediment can be normal characteristics of the style.
The important distinction is between an expected dense green liquor and a brewing problem such as harsh over-extraction. Visual clarity alone cannot tell you whether the tea was brewed well.
Does Fukamushi need a fine-mesh filter?
Not necessarily. A fine mesh will generally retain smaller particles than a more open filter, but that does not automatically make it better for Fukamushi.
There are two competing effects:
- Particle retention: finer openings can produce a clearer cup by catching more leaf fragments.
- Flow resistance: fine particles can cover mesh openings and slow drainage, especially when the active filter area is small.
There is also a sensory choice. Some suspended material contributes to the dense appearance and body associated with many Fukamushi brews. Removing more of it changes the cup; whether that change is preferable is a matter for controlled comparison and personal preference, not an automatic quality improvement.

Why does Fukamushi clog some teapots?
Fine leaf material can accumulate against a filter during pouring. If the filter has a small active area, the particles may form a layer over the openings and make the liquor drain more slowly.
This is why the useful question is not simply “How fine is the mesh?” Filter performance also depends on:
- the total open filtration area;
- mesh or perforation geometry;
- where the filter sits relative to the spout;
- how much leaf is used;
- how the wet leaves settle during pouring;
- how quickly the pot is tilted and drained.
Historically, broad band-style mesh filters have been associated with Fukamushi because their larger filtration area provides more paths for the liquor to escape if one section becomes covered with leaf. That is an engineering advantage, but it still does not mean one filter style is universally best for every tea or every brewer.

How to brew Fukamushi Sencha
Use the same variables as any other Sencha—dose, water volume, temperature and time—but start shorter because the fine leaf structure tends to extract quickly.
- Measure the tea. Around 2 g per 60 mL is a useful reference ratio.
- Use moderately cooled water. Around 70–80°C is a practical starting range.
- Keep the first steep short. Start around 30 seconds.
- Decant promptly. Do not let a slow filter quietly add a long extra extraction after the timer ends.
- Adjust one variable at a time. If the tea is too intense, shorten the steep, lower the temperature or reduce the dose. If it is too light, move in the opposite direction.
The exact recipe should follow the specific tea rather than the word Fukamushi alone. Some lots are finer, some more intact, and producers may recommend different parameters.
Drain time matters more with fine leaf
A timer measures steep time, but extraction continues while the liquor is still trapped among the leaves. If a filter takes another 20 or 30 seconds to clear because fine particles have blocked part of the mesh, the real contact time is longer than the nominal recipe suggests.
For Fukamushi, pay attention to how quickly the vessel actually empties. A filter that retains very fine material but drains slowly may require a shorter nominal steep than a more open filter.

What brewing tool should you use?
You can brew Fukamushi in a kyusu, a cup-top strainer or a roomy infuser. The most important practical requirements are sufficient leaf space and a filter that drains reliably with fine material.

Should you try to remove all the sediment?
No universal rule says you should. If you prefer a very clear cup, a finer filter may suit you. If you enjoy a denser green liquor with more suspended material, a more open filter may preserve more of that character.
The important point is to separate measurable filtration from taste preference. “This filter catches more particles” can be measured. “This filter makes Fukamushi taste better” requires a controlled tasting and still depends on what the drinker prefers.
Fukamushi Sencha FAQ
Is Fukamushi stronger than regular Sencha?
It can extract faster and often produces a visually denser cup, but “stronger” is not a fixed property. Dose, temperature, time, leaf grade and water all affect intensity. Deep steaming changes the leaf structure; it does not guarantee a particular strength in every brew.
Is cloudy Fukamushi low quality?
No. Fine suspended leaf material is common in deep-steamed tea and can make the liquor look cloudy or opaque green. Cloudiness alone is not a quality judgment.
Why are Fukamushi leaves so broken?
The longer steaming softens and weakens the leaves. During subsequent rolling and drying, they tend to fragment more readily than less deeply steamed Sencha.
How long should Fukamushi steep?

Fukamushi is a processing style, not a quality shortcut
Deep steaming gives Fukamushi its distinctive brewing behavior: more fragile leaf, faster extraction, more fine particles and often a dense green liquor. Understanding those physical changes makes the tea easier to brew and makes filter choice much less mysterious.
