Can You Sharpen a Single-Bevel Knife at Home?

Yes. A single-bevel knife can be sharpened at home if the edge is in normal condition and you understand the blade geometry.

Start with a flat stone
Flatness matters because the large bevel rests directly on the stone. A dished stone can distort the bevel and shinogi.
Work the main bevel
Lay the bevel on the stone and follow the existing surface rather than inventing a new angle.
Preserve the shinogi
Avoid grinding high above the bevel. Moving the shinogi unevenly changes the blade geometry.
Raise a small burr
Work the bevel until the edge is reached consistently and a light burr can be detected on the back.
Touch the ura lightly
Lay the back flat on a fine stone and use only enough contact to remove the burr. Do not grind away the hollow.
When should you stop?
If the back is distorted, the bevel is heavily uneven, the shinogi has moved badly or the knife needs major thinning, specialist work is safer.
