How to Store Japanese Kitchen Knives

The best storage method is one that keeps the edge from striking hard objects, keeps the blade dry and lets you remove the knife without scraping the edge. Saya, magnetic strips, suitable blocks and drawer inserts can all work.

Saya

A fitted blade cover protects the edge and is useful for drawers, transport and long knives. Put the knife away only when both blade and saya are dry.

Magnetic strips

A well-designed strip keeps knives visible and easy to reach. Wood-faced strips can soften contact with the blade. Place the flat side of the blade onto the strip rather than snapping the edge into it.

Knife blocks

Blocks can work if slots are clean, dry and wide enough that the edge does not scrape. Horizontal or edge-up storage can reduce unnecessary edge contact.

Drawer inserts

A dedicated insert is much better than loose drawer storage. Each knife should have its own protected position.

What to avoid

  • Loose storage with metal utensils.
  • Putting a damp knife into a closed cover.
  • Resting the edge directly on stone, metal or ceramic.
  • Leaving carbon steel in a humid environment.

Long-term storage

Clean and dry the knife thoroughly. For very reactive carbon steel stored for a long period, follow the maker’s guidance on protective oil suitable for kitchen tools.
