What Can You Cut With a Japanese Mandoline?

The current SUWADA Japanese Mandoline Slicer is designed for quick, even slicing of vegetables and hard cheese. Other mandolines can offer additional cuts such as julienne or adjustable thickness, but those features vary by model and should not be assumed.

What does a mandoline do?

A mandoline passes food across a fixed blade to create repeated slices more quickly and consistently than many people can achieve by hand with a knife. De Buyer describes mandolines as tools for fast, precise fruit and vegetable cutting, with the exact cut depending on the blades and accessories fitted to a particular model.

What can the SUWADA Japanese Mandoline cut?

  • vegetables;
  • hard cheese;
  • ingredients where repeated, even slices are useful for preparation or presentation.

The current SUWADA product description does not specify adjustable thickness, julienne blades, meat slicing or an included hand guard, so we do not claim those functions.

Can you use it for soft vegetables?

Suitability depends on firmness and the blade design. Very soft or irregular foods can behave differently from firm vegetables. Work within the maker’s instructions for the food and model you are using.

Mandoline vs knife

A knife offers more freedom over shape and cut. A mandoline is useful when repeated slices are the goal. Neither replaces the other completely.

What size is the SUWADA model?

  • Length: 20.5 cm
  • Material: stainless steel
  • Handmade in Tsubame-Sanjo, Japan

How do you use it safely?

Mandoline blades are extremely sharp. Keep fingers away from the blade, stabilize the tool, and use the holder or guard when your particular model provides one. Read our full guide: How Do You Use a Japanese Mandoline Safely?

Does an SLD Knife Need Oil?

An SLD kitchen knife usually does not need oil for normal daily use if it is washed and dried carefully. A thin food-safe oil layer can help during long storage or in very humid conditions.

Is SLD Stainless or Semi-Stainless?

SLD contains about 12% chromium, but in kitchen-knife use it is usually safer to describe it as semi-stainless rather than fully stainless because it can still stain or rust if neglected.
