What Is an Azumagata Knife?

Azumagata refers to a square-profile vegetable-knife form associated with eastern Japan, especially the Kanto region. The term needs context because it can appear on more than one bevel construction.

Preparing vegetables with a kitchen knife

Traditional meaning

In traditional Japanese knife terminology, Azumagata commonly describes the Kanto-style form of an usuba: a tall vegetable knife with a broad, square front. Traditional usuba knives are usually single bevel.

Why the name can be confusing

Some double-bevel vegetable knives are also sold with the Azumagata name because they use a related broad, square or slightly curved vegetable-knife profile. The name alone therefore does not tell you whether the edge is single or double bevel.

Azumagata vs nakiri

A typical nakiri is double bevel and intended to be straightforward for general vegetable prep. A traditional Azumagata usuba is single bevel and belongs to a more specialised Japanese knife tradition.

What should you check before buying?

Check the bevel construction, handedness, blade length, edge profile and care requirements. Do not assume that every knife labelled Azumagata sharpens or cuts in exactly the same way.

What is it used for?

The common theme is vegetable preparation: chopping, slicing and board-based cutting. Single-bevel versions can also support specialised traditional techniques.
