Why Choose a Single-Bevel Japanese Knife?

Choose a single-bevel Japanese knife when you specifically want the cutting behaviour of traditional specialised geometry. It is not automatically sharper or better than a double-bevel knife.

Precision in specialised tasks

Traditional yanagiba, usuba and deba knives use a large bevel on one side with specialised geometry on the back. The shape can influence how the knife moves through food and how the cut material separates from the blade.

Long clean slices

A yanagiba combines single-bevel geometry with a long blade so boneless fish can be sliced in one drawing stroke rather than sawed back and forth.

Controlled vegetable work

Traditional usuba geometry is designed for skilled vegetable techniques where a precise, flat cut and controlled slice are important.

Purpose-built fish work

Deba knives use a much more substantial single-bevel construction for breaking down fish. Their geometry and thickness are very different from a yanagiba even though both are single bevel.

Why not choose one for everything?

Single-bevel knives can steer if technique or handedness does not match the grind. They are handed, require specialised sharpening and are less intuitive for general-purpose home cooking.

Who should buy one?

A single-bevel knife makes sense when the task itself matters enough to justify a specialised tool and you are prepared to learn its use and maintenance. For a first all-purpose Japanese knife, a double-bevel santoku or gyuto is usually simpler.
