Carbon-Steel Japanese Knife Care Guide

Carbon-steel kitchen knife care is mostly about controlling moisture. Wash the blade after use, dry it immediately and do not leave food residue or water sitting on the steel.
Wash by hand
Use warm water, mild dish soap and a soft sponge or cloth. Avoid the dishwasher, soaking and harsh abrasives unless you are intentionally treating rust.
Dry immediately
Dry the blade, spine, heel and handle junction carefully. Pay extra attention after citrus, tomato, onion, salt and other reactive foods.
Patina is normal
Grey, blue or dark surface colour can be a stable patina. That is different from active orange, rough or powdery rust.
Do you need oil?
Not always for a knife used frequently and stored completely dry. A very thin layer of food-safe protective oil is useful for longer storage or humid environments.
Use a suitable cutting board
Wood is generally gentle on a fine edge. Avoid glass, stone and metal boards because they are hard on the apex.
Store it dry
Do not trap moisture inside a sheath, block or drawer. Make sure both knife and storage surface are dry.
Sharpen before it becomes extremely dull
Light maintenance removes less steel than rescuing a heavily worn edge.
