How Sharp Should a Gyuto Knife Be?

A Gyuto should be sharp enough to cut normal ingredients cleanly without excessive pressure. You do not need an extreme laboratory-level edge for everyday cooking.
What does practical sharpness feel like?
The knife should start into tomato skin, onion skin and herbs without slipping badly or crushing them before the edge engages.
Does paper testing help?
Paper is a useful quick check for continuity along the edge, but it does not tell you everything about how the knife performs in food.
Should a Gyuto shave hair?
It can, but that is not a requirement for kitchen performance. A toothier edge can work very well on tomato, meat and fibrous food.
Can an edge be too refined?
Yes for some tasks. A very highly polished edge may feel smooth but can have less initial bite on certain skins and fibres.
What matters besides sharpness?
Blade geometry, thickness behind the edge, food release and technique all affect cutting feel.
When should you sharpen?
Sharpen when the knife no longer performs cleanly in the food you normally prepare, rather than following a fixed calendar.
