Should You Soak a Whetstone?

Do not automatically soak every whetstone. Some water stones are designed to absorb water before use; others are splash-and-go and only need their surface wetted.

Why do some stones need soaking?

Porous soaking stones work better once their internal structure has absorbed enough water to keep the sharpening surface lubricated and prevent it drying immediately.

Why should some stones not be soaked?

Denser or resin-bonded stones can be designed for surface wetting only. Long soaking may not help and, depending on construction, can damage or weaken some stones.

How long should a soaking stone stay in water?

Follow the manufacturer. Naniwa, for example, lists some of its stones as surface-wet only and others at roughly 5–20 minutes. The correct time is stone-specific.

What is splash-and-go?

A splash-and-go stone is used after wetting the surface rather than fully soaking the stone. Add water during sharpening as the surface dries.

What if you do not know which stone you have?

Find the product instructions before submerging it. If the stone is unidentified, avoid an hours-long soak until you know its binder and manufacturer guidance.

After sharpening

Rinse away swarf, wipe the stone and allow it to dry gently away from strong heat and direct sunlight. Do not put a whetstone in the dishwasher.

How Do You Choose a Deba or Yanagiba for a Left-Handed Cook?

Choose a Deba or Yanagiba specifically ground for left-handed use. True single-bevel knives are handed, so a left-handed cook should not assume a standard right-handed blade will behave correctly simply by holding it in the other hand.

Maple vs Walnut Cutting Boards for Japanese Knives

Both maple and walnut can work well with Japanese knives. Hard maple is generally harder and more wear-resistant; black walnut is somewhat softer and can feel more forgiving under the edge. Construction and maintenance matter as much as species.
