What Is a 1000-Grit Whetstone Used For?

A 1000-grit whetstone is a general-purpose sharpening stone for restoring a normally dull kitchen knife.

Routine edge restoration
It removes enough steel to rebuild a working edge without being as aggressive as a repair stone.
Reaching the apex
For a dull but undamaged knife, 1000 grit is often coarse enough to form a clean apex and small burr.
Leaving a useful kitchen finish
A well-deburred 1000-grit edge can already perform very well on vegetables, meat and general prep.
When is 1000 grit too fine?
Large chips, major reprofiling or an extremely blunt edge may take too long. A coarser stone can make more sense.
When is 1000 grit too coarse?
If the edge is already sharp and you only want refinement, a finer stone may be more efficient.
Do you need to follow it with a finer stone?
No. Many home cooks can stop at 1000 grit if the edge is clean and suits their work.
