A Japanese grater is a hand grating tool designed for preparing ingredients such as daikon, ginger, garlic, wasabi, citrus or cheese—but there is no single Japanese grater shape. Some make a fine moist paste, some collect grated ingredients in a bowl, and others work more like compact hand graters.
Is a Japanese grater the same as an oroshigane?
Oroshigane is a traditional Japanese term for a metal grater. Today the broader category includes stainless-steel, ceramic and other grating surfaces in many shapes. It is therefore better to look at the intended texture and ingredient rather than assume every Japanese grater is identical.
