Which Japanese Knife Is Right for Everyday Cooking?

For everyday cooking, a santoku or gyuto is usually the most practical Japanese knife. Both can handle vegetables, herbs, fruit, boneless meat and fish, so the decision is more about size and cutting style than ingredient category.

Preparing vegetables with a kitchen knife

Choose santoku for compact control

A santoku is generally shorter and taller, with a relatively flat edge and a less pronounced point. It feels efficient on small or medium boards and suits push cutting and chopping.

Choose gyuto for more reach

A gyuto usually gives you a longer edge and a finer point. The extra length helps with larger vegetables, meat portions and longer slicing strokes.

What about petty knives?

A petty is excellent for small ingredients, trimming and detail work, but it lacks the height and reach to be the only knife for most kitchens.

What about nakiri?

A nakiri is very efficient for vegetables, especially push cutting, but its blunt tip and vegetable-focused shape make it less universal than santoku or gyuto.

Choose the size before chasing steel

A knife that fits your board and ingredients is more useful than an exotic steel in the wrong length. Around 165–180 mm is common for santoku and around 180–210 mm is a practical home range for gyuto.

For a first purchase

Pick the shape that feels most natural for your workspace, then choose steel and maintenance level. Stainless is simpler; carbon needs more corrosion care.
