Which Japanese Knife Is Right for Vegetables?

Nakiri, santoku and gyuto can all be excellent vegetable knives. The best fit depends on whether vegetables are your main task or only one part of everyday cooking.

Preparing vegetables with a kitchen knife

Nakiri: vegetable specialist

A nakiri has a tall, rectangular blade and a very flat edge. It is especially efficient for push cutting, chopping leafy greens and making full contact with the board.

Santoku: compact all-purpose choice

A santoku keeps much of the blade height and flatness that works well for vegetables, while also giving a point and general-purpose geometry for meat and fish.

Gyuto: more reach and tip control

A gyuto is useful when you prepare large vegetables or want one knife for mixed cooking. The longer blade helps with cabbage, squash and larger produce, while the tip helps with detailed cuts.

What about very small vegetables?

A petty can be useful for garlic, shallots, mushrooms, trimming and small garnishes where a full-size knife feels excessive.

Which is easiest to use?

If you mainly push-cut vegetables, nakiri is very direct. If you want one compact knife for everything, santoku is versatile. If you want more reach, gyuto makes sense.

Do not choose by steel alone

Blade height, thickness behind the edge and overall geometry often matter more for vegetable cutting than the steel name.
