Why Does My Pour-Over Coffee Taste Sour? A Troubleshooting Guide

Pour-over coffee can taste wonderfully bright: citrus, berries, stone fruit and crisp acidity can be part of what makes a coffee distinctive. But there is a difference between bright and unpleasantly sour. If the cup tastes sharp, hollow or aggressively tart, the brewing process may be leaving the coffee out of balance.
Short answer
If your pour-over tastes sour, the first thing to check is not simply whether the coffee is “under-extracted”. Look at taste, brew time and cup strength together.
- Sour + fast + thin: start by grinding slightly finer.
- Sour + normal brew time but weak: check your coffee-to-water ratio, uneven wetting and bypass.
- Sour + slow + dry or rough: do not automatically grind finer. Uneven flow, clogging or excessive fines may be creating a mixture of poorly and heavily extracted areas.
- Bright but sweet and balanced: you may not have a problem at all. Some coffees are naturally more acidic.
The goal is not to remove acidity. It is to make the cup taste balanced, sweet and clear enough for the acidity to make sense.
First: sour coffee is not the same as bright coffee
Acidity is a normal and often desirable part of coffee. A light-roasted washed coffee may taste lemony, floral or berry-like even when it is brewed very well. Darker coffees may present acidity more quietly alongside chocolate, caramel or roasted flavours.
Useful sensory language can help. Pleasant acidity often feels lively, juicy or crisp and is supported by sweetness and aroma. Unpleasant sourness tends to feel sharp, hollow or one-dimensional, as though the brew stops before the sweeter and fuller parts of the flavour have caught up.
Also separate sourness from astringency. Astringency is the drying, rough or puckering sensation that makes the mouth feel stripped. A cup can be sour, astringent, both, or neither. The distinction matters because the fixes are not always the same.
What does sourness mean in extraction terms?
A common explanation says that sour coffee is under-extracted. That is useful as a starting point, but it is too simple as a universal rule.
Research on brewed-coffee sensory perception shows that sourness is strongly influenced by the combination of beverage strength and percentage extraction. A coffee can be quite strong in the cup while still having relatively low extraction from the grounds. In other words, strong does not necessarily mean well extracted.
This is why three ideas should stay separate:
- Brew ratio is how much coffee and water you use.
- Beverage strength is how concentrated the finished drink is.
- Extraction describes how much soluble material has been removed from the coffee grounds.

Do not treat this table as a set of rigid laws. It is a way to choose the first variable worth testing.
1. Check your grind size
Grind is usually the most useful first adjustment when a pour-over is sour, fast and thin. A slightly finer grind increases the surface area available to the water and generally increases resistance in the coffee bed, giving extraction more opportunity to develop.
But “grind finer” is not automatically correct whenever you taste sourness.
If the brew is already unusually slow and the cup is sour and rough or drying, grinding finer may make matters worse. Real ground coffee contains a distribution of particle sizes, not one perfectly uniform size. Fines can migrate through the bed, accumulate near the filter and change permeability during brewing. Uneven flow can then leave some areas poorly extracted while others receive much more contact with water.

Try this first
If your coffee is clearly sour, thin and faster than your normal recipe, move the grinder only a little finer. Keep the dose, water amount, temperature and pouring pattern the same. Taste the next brew before changing anything else.
2. Look for uneven flow, channeling and bypass
A brew can have a perfectly respectable total drawdown time and still extract unevenly. Water does not necessarily travel through every part of the coffee bed in the same way.
Possible signs include:
- persistent dry pockets during the bloom;
- a visibly disturbed or cratered bed;
- water finding easier paths through part of the coffee;
- large changes in drawdown from one brew to the next with the same recipe;
- a cup that tastes simultaneously sharp and drying.
Some brewers also permit more water to bypass the coffee bed than others. Filter fit, wall geometry and the way the paper is supported can all change the hydraulic behaviour of the brew. This is why changing from one dripper or paper to another can require a new grind setting even if the papers look similar.

3. Check the coffee-to-water ratio
If the cup is sour and weak, make sure the recipe itself is not producing a very dilute drink. A practical starting point for pour-over is around 60 g of coffee per litre of water, roughly 1:16.7, but this is a starting neighbourhood rather than a universal optimum.
Be careful with the intuitive response of simply adding more coffee. A tighter ratio can make the beverage stronger, but it does not guarantee that each gram of coffee is being extracted more completely. You can end up with a stronger cup that still tastes sharply sour.

4. Use temperature as an extraction lever, not a magic sourness switch
“Your water was too cold” is another common explanation for sour coffee. Temperature certainly affects extraction: hotter water generally makes it easier to dissolve coffee compounds, so a very light roast that tastes persistently sharp may benefit from hotter brewing water.
But temperature itself is not a simple sour-versus-bitter dial. Controlled sensory research has found that when beverage strength and extraction are held similar, the direct sensory effect of brewing temperature within a normal hot-brewing range can be much smaller than people expect.
So use temperature strategically:
- For a light roast that remains sharp despite a sensible grind and even flow, try somewhat hotter water.
- For a darker roast, you may prefer a lower temperature for flavour reasons even if the brew could extract more at a higher temperature.
- Do not change temperature, grind and pouring all at once or you will not know which adjustment helped.
5. Check your pouring and agitation
Pouring changes more than the amount of water in the brewer. The stream can disturb the bed, alter the water level above it and change how evenly fresh water reaches the grounds.
The aim is usually even wetting with controlled agitation. During the bloom, make sure there are no obvious dry areas. During the main pours, use a repeatable pattern rather than chasing turbulence for its own sake.
More agitation is not always better. Vigorous swirling or stirring can redistribute fines and, in some combinations of coffee, grinder, paper and brewer, contribute to slower flow. On the other hand, too little effective wetting can leave parts of the bed underused.

6. Consider the coffee itself
Not every acidic cup needs to be “fixed”. Coffee origin, variety, processing and roast all influence the acids and aromatic compounds available in the beans. Light roasting also tends to preserve a brighter acid profile than darker roasting.
If a coffee is described as citrusy, berry-like, floral or very bright, some lively acidity is probably part of its intended character. Before changing your recipe aggressively, ask whether the cup is actually unpleasant or simply different from the style of coffee you normally drink.
A useful target is not “no sourness”. It is acidity supported by sweetness and enough body or flavour development to feel complete.
7. Did you change the filter or dripper?
Paper is not just a passive flavour screen. Different papers can have different flow resistance, and the brewer determines how the paper is supported and where water can leave the filter. These differences can alter contact time and flow even when your grinder and recipe stay unchanged.
This is especially important when comparing open wire supports with solid-wall brewers. The shape of the paper alone does not make two brewers hydraulically equivalent. Filter geometry, brewer geometry and coffee-bed geometry are different things.

A reliable way to fix sour pour-over coffee
- Keep the recipe stable. Weigh the coffee and water and use the same brewer, filter and pouring structure.
- Record the brew time. Treat it as evidence, not a pass/fail target. See how long a pour-over should take.
- Taste before adjusting. Decide whether the problem is sharp sourness, weakness, dryness, bitterness or simply lively acidity.
- Choose one likely variable. For fast + sour + thin, grind a little finer. For slow + sour + dry, investigate uneven flow before grinding finer.
- Change one thing. Small controlled changes teach you more than a complete recipe reset.
- Stop when the cup tastes good. A brew does not need to hit somebody else's exact drawdown time or grinder setting to be successful.
Three common examples
“My V60 finishes very quickly and tastes like lemon water.”
If the cup is both thin and sharply sour, start with a slightly finer grind. Keep the dose and water constant. If the next brew gains sweetness and body without becoming rough, you are moving in the right direction.
“My pour-over takes a long time but still tastes sour.”
Do not assume the answer is finer grinding. Look for a stalled filter, excess fines, strong agitation or uneven flow. A long total brew time does not prove that every particle was extracted evenly.
“The coffee is strong but still sour.”
Remember that strength and extraction are different. A concentrated cup can still have relatively low extraction. Improve the extraction process first rather than automatically increasing the dose.
Frequently asked questions
Is sour coffee always under-extracted?
No. Low extraction is a common reason for unpleasant sourness, but sourness also depends on beverage strength, coffee chemistry and extraction uniformity. Some well-brewed coffees are naturally bright and acidic.
Should I grind finer if my pour-over is sour?
Often, if the coffee is also fast and thin. If the brew is already slow and tastes sour plus dry or rough, finer grinding may increase clogging or uneven extraction. Diagnose the flow first.
Does hotter water fix sour coffee?
Sometimes. Hotter water can increase extraction and can be useful with light roasts, but temperature is not a universal sourness switch. Use it as one controlled variable.
Can a pour-over taste sour even if it brewed slowly?
Yes. Total brew time is only one signal. A slow brew can still contain unevenly extracted regions if flow through the bed is non-uniform or the filter is partially stalled.
Is acidic coffee bad?
No. Acidity is part of coffee's flavour structure. Good acidity can taste lively, fruity and refreshing. The problem is usually acidity that feels disconnected from sweetness, aroma and body.
Can filter paper make coffee taste sour?
Indirectly, yes. A different paper can change flow resistance and therefore the extraction conditions. The brewer's support geometry matters as well, so changing paper may require a new grind or pouring adjustment.
