Why Can Hard Japanese Knives Chip?

Hard Japanese knives can chip because high hardness is often paired with thin edge geometry, and thin hard edges tolerate less twisting and impact than thicker, softer ones. Hardness alone is not the whole explanation.

Hardness reduces deformation

A hard edge resists rolling and can remain stable at a thin profile. That is one reason Japanese knives can cut with low resistance.

But toughness matters too

Within the same steel, raising hardness generally reduces toughness. Different steels also have different toughness at the same HRC, so the number cannot predict chipping by itself.

Thin geometry increases stress

The thinner and more acute the edge, the less material supports it. That improves cutting feel but leaves less margin for sideways force.

Common causes of chips

  • Twisting the blade in dense vegetables.
  • Hitting bones, frozen food, pits or hard shells.
  • Cutting on glass, stone, ceramic or metal.
  • Dropping the knife or striking another hard object.
  • Using an edge angle that is too acute for the task.

Does a chip mean the steel is defective?

Not necessarily. Small chips are often the result of task and geometry. Repeated unexplained chipping under normal soft-food use can justify checking sharpening, edge condition and, if necessary, the maker.

Can you make the edge more durable?

Sometimes. A slightly stronger sharpening angle or tiny micro-bevel can add support, but do not redesign a specialised knife blindly. Preserve the maker’s intended geometry unless there is a clear reason to change it.
