Yes. A Yanagiba can slice boneless meat, especially with long draw cuts, but meat is not its primary role. Traditional Yanagiba geometry is optimized for precise slicing of boneless fish.
What meat can a Yanagiba slice?
Boneless roasts, cooked beef, ham, poultry breast and other soft boneless proteins can all be sliced cleanly.
Why does the cut feel different?
A traditional Yanagiba is single bevel. That asymmetry can make the blade steer in the cut, especially if you are used to symmetrical chef’s knives.
Yanagiba vs Sujihiki for meat
Sujihiki is usually the easier choice for regular meat slicing because it is normally double bevel and behaves more neutrally through a range of proteins.

Can a Yanagiba trim meat?
Some trimming is possible, but the long narrow blade is less convenient than a Gyuto or Petty for compact detail work around fat and connective tissue.
Can it cut through bones or joints?
No. Avoid bones, hard joints, frozen meat and any task that requires twisting or levering.
When does using a Yanagiba on meat make sense?
If you already own one and occasionally need long clean slices of boneless meat, it can do the job. If meat slicing is frequent, a Sujihiki is more practical.
