A straight-edged Japanese steak knife that cuts instead of sawing

SUWADA designed this knife around a simple idea: a steak should be sliced cleanly, not torn by a coarse serrated edge. The result is a sharpened, non-serrated Nitro-steel blade made in Japan in three finishes.

What you notice in the hand

  • All-metal construction: the knife feels cool, precise and deliberately substantial.
  • Straight cutting edge: the blade glides through meat with a slicing motion rather than a back-and-forth sawing action.
  • Three distinct surfaces: matte is quiet and industrial, brushed shows a fine directional finish, and mirror polished reflects its surroundings.

Why it costs more than an ordinary steak knife

Nitro steel is difficult to shape and finish to SUWADA's standard. Production is small, each knife is finished and sharpened individually, and the mirror version requires additional polishing. This is table cutlery made with the same obsession with edge quality that defines SUWADA's cutting tools.

Care

Do not cut bones or strike the edge against hard surfaces. The knife is dishwasher safe according to SUWADA's current care guidance; dry it well after washing. Sharpen carefully on a whetstone when required.
